avocado pudding

Low FODMAP

Makes 8 servings

Ingredients
2 ripe avocados
1 banana
1/2 medium orange, juiced (or 2 tbs orange juice)
2/3 cup cocoa powder
2 tsp vanilla extract
1/4 cup + 1 tbs. milk--> FODMAPers use lactose free substitute
1/3 cup pure maple syrup (orr make some simple syrup using 1/3 cup table sugar + 1/3 cup water, boiled)
1/2 tsp salt
 

Directions
1. Combine all ingredients in a blender- combine until smooth.
- consistency will be thick, so I usually take a large spoon to do the rest of the blending myself. 
2. Top with nuts, seeds, coconut flakes, etc!
