blood-orange salad

Low FODMAP

Makes 2

Ingredients
2 cups fresh spinach, or mixed greens
2 blood oranges, peeled and sliced
a handful of macadamia nuts*
1 teaspoon sesame seeds
1-2 spoonfuls of goat cheese
juice of one lemon widge
olive oil, drizzled
salt and pepper, to taste

*FODMAPer tip: limit to 20 nuts per serving

Directions
Toss greens in a large bowl with some olive oil. Add in the remaining ingredients. Toss around some more. Divide into two,  & enjoy :)
