Ingredients
1 lb shrimp, peeled and deveined
2 cups zucchini noodles
2 tablespoons ginger, minced
2 cups Asian style mixed vegetables
(I used Market basket’s frozen Oriental blend with the baby corn and water chestnuts.. sosogooood)
4 cups vegetable or chicken broth
1/4 cup soy sauce
Directions
1. Add broth to sauce pan over and bring to a boil.
2. Reduce heat to medium, throw in frozen vegetables and ginger and cook for ~ 5 minutes.
3. Add shrimp and zucchini noodles until shrimp are fully cooked (pink, opaque).
4. Lastly add your soy sauce and allow to simmer a few minutes.
